Study Shows Coffee, Eggs, and White Rice Linked to Higher PFAS

( – A recent discovery through research showed specific foods that contained higher levels of PFAS, or forever chemicals, than other foods. The research showed that those who eat more eggs, white rice, coffee, and seafood typically have more PFAS in their plasma and breastmilk.

The study looked into three thousand pregnant mothers to get the research results. This was the first study of its kind to show that coffee and white rice could be linked to higher chemicals. Researchers also found from the study that red meat is linked to PFOS, which is the most dangerous kind of PFAS compound.

Megan Romano, a Dartmouth researcher and lead author, said, “The results definitely point toward the need for environmental stewardship, and keeping PFAS out of the environment and food chain. Now we’re in a situation where they’re everywhere and are going to stick around even if we do aggressive remediation.”

PFAS is a group of over sixteen thousand chemical compounds used to make products that resist water, stains, and heat. They are referred to as forever chemicals because they don’t naturally break down and they’ve been found to accumulate everywhere including in humans.

Researchers have found that there is a higher amount of PFAS in backyard chicken eggs, which could be associated with table scraps being fed to the chickens. It also could be their exposure to sewage sludge, which is an alternative to fertilizer and could contaminate the soil where chickens eat.

Coffee beans, the water used for brewing, and even the soil to grow the beans could possibly be contaminated. They’ve also found in previous research that coffee filters and paper cups also tend to contain these chemicals.

Seafood is mainly contaminated because of the PFAS in the water where seafood obviously resides. Public health advocates have proposed a ban on the chemical for non-essential use.

Said Romano, “That helps you not only reduce your exposure to PFAS but other contaminants we might anticipate are in food.”
